Copal Progressive Mexican Cuisine
Copal is an awesome place to visit if you want an “authentic” Mexican experience … and I don’t mean authentic in the way you think I do. To me authentic is something that is completely unique, created by the chef at that restaurant and an experience that you’re not going to find anywhere else, even if it’s a the chef’s spin on a traditional dish. Not the same beans rice with meat and cheese wrapped in a tortilla that you find in thousands of restaurants across America, what people will usually call “authentic.” That said, Copal has they has gravitated more in the traditional direction from their very creative start (which I so miss!). But they still do a great job of being both authentic and creative … and really good.
