Pepe’s Bistro

I have been really impressed with Pepe’s and it just happens to be Vegan. The things that get me excited about any restaurant is 1) a creative menu which changes often & 2) these specials come from the creative mind of an on-site chef. Of course neither of those two matter if 3) the resulting food isn’t really good, but all three are exactly what you get when you go to Pepe’s. Quite honestly, I would list Pepe’s as Lincoln’s biggest hidden gem since his location isn’t in a high traffic area and the word “vegan” will eliminate him from a lot of people’s list. But if you’re like me, once you find him, you will be going back often.

For breakfast, Pepe does some great breakfast burritos, which I find at a few places, including the farmers markets, but also at White Elm from time to time.

Favorite dish so far

Pepita pesto mushroom quesadilla … or like 20 jars of the fresh salsa.
